STEAM MUSHROOM CHICKEN RICE

Serves 3-5
(Prep.time 30 mins)

Ingredients:

  • 2 mushroom (soak to soft)

  • 200g of lettuce

  • 300g of chicken meat (chopped)

  • ¼ of cucumber

  • 4 slices of ginger

  • 1 spring onion

  • Minced garlic

  • Rice

  • 1 tbsp of oyster sauce

  • 1 tbsp of sesame oil

  • 1 tbsp of light soy sauce

  • Salt


To make it:

  • Marinade chicken meat with sliced ginger, minced garlic, proper amount of oyster sauce, sesame oil and light soy sauce for about half an hour.

  • Cut the mushroom, cucumber and spring onion into the pieces and set aside. Then cook the rice based on the number of people.

  • Heat the pan with 1 tablespoon of oil, pour in minced garlic and sliced mushroom, add in lettuce and some salt then stir-fry for a while.

  • Steam the marinated chicken meat for 20 minutes. (Use steam instead of stir-fry to make the chicken meat smooth in mouthfeel)

  • Transfer all to a bowl then put some sliced cucumber and spring onion. Ready to serve.
