
STEAM MUSHROOM CHICKEN RICE
Serves 3-5
(Prep.time 30 mins)
Ingredients:
2 mushroom (soak to soft)
200g of lettuce
300g of chicken meat (chopped)
¼ of cucumber
4 slices of ginger
1 spring onion
Minced garlic
Rice
1 tbsp of oyster sauce
1 tbsp of sesame oil
1 tbsp of light soy sauce
Salt
To make it:
Marinade chicken meat with sliced ginger, minced garlic, proper amount of oyster sauce, sesame oil and light soy sauce for about half an hour.
Cut the mushroom, cucumber and spring onion into the pieces and set aside. Then cook the rice based on the number of people.
Heat the pan with 1 tablespoon of oil, pour in minced garlic and sliced mushroom, add in lettuce and some salt then stir-fry for a while.
Steam the marinated chicken meat for 20 minutes. (Use steam instead of stir-fry to make the chicken meat smooth in mouthfeel)
Transfer all to a bowl then put some sliced cucumber and spring onion. Ready to serve.
